Southern Cucumber and Tomato

In a bowl, place peeled cucumber slices. Add sliced ripe tomatoes cut in eights or smaller (depending how big they are or use grape tomatoes cut in half!) and green onion slices or thin shavings of purple onion. There is no rule as to how much of each veggie – it is whatever you enjoy. 

Pour the vinaigrette over the salad, cover with plastic wrap or lid, and let marinade for a while – the longer the better to allow the vinaigrette to infuse into each veggie. When ready to serve, use a slotted spoon and place salad mixture into individual salad cups or bowls, adding salt and pepper to taste. This is a great quick delicious salad, and will store for several days in the fridge.
